We ran our first sourdough class last Sunday. Six people signed up, and all six went home with a loaf they'd shaped themselves.
What surprised us
Everyone wanted to know about starters more than shaping. We spent the first hour on feeding schedules and the questions didn't stop. Next time, starters get their own section.
One student has already named theirs Gerald, which we're told is going well.
